Soupa Doupa

I'm Back!!

I know.... some of you have been telling me off for my lack of regular blogging. Bad Scarlet.

I will do my best to make this a more regular occurance, honest.

Anyway for those of you that are experiencing wintery type weather. Here is a a lovely warming soup recepie. Given to me years ago by a neighbour. And for those of you that don't like olives much, trust me, i have given this to olive haters, and they cant taste them. It just makes for a very rich tasty flavour.

Courgette & Green Olive Soup – Serves 4-6

Ingredients

1 onion chopped

1 clove of garlic crushed

1.5 lb of courgettes chopped

2tsp olive oil

0.5 tsp thyme

0.5 tsp oregano

1 bay leaf

2 oz pitted green olives

1.25 pts of veg stock

2-3 tbsp fresh lemon juice

Salt and pepper

Method

  1. Heat oil and fry onion and garlic until soft.
  2. add courgettes and sweat for 10 mins
  3. add herbs, olives and stock, bring to the boil
  4. simmer for 25-30 mins ( 7 mins in a pressure cooker, once up to pressure)
  5. Blend and season, then add lemon juice.

Devour with hearty abandon! And wonder why something so simple tastes so good. I hope you enjoy? Let me know how you got on. Clare

P.S. It will freeze very well too, so worth making in bulk and having as a quick microwave stand by.
